GROUND BEEF AND CABBAGE

Ground Beef and Cabbage image

My mother was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. The dish I am going to give you today is one like that. Simple and easy, yet full of love and goodness. My mother used to serve this with corn on the cob and cornbread. Very inexpensive and very good as well. Enjoy an Ozark memory...

CABBAGE BEEF CASSEROLE

Cabbage Beef Casserole image

With an Italian flavor, this one dish casserole is always a hit at dinner and pot lucks. Most never realize it is cabbage. I love being able to put this together the evening or morning before to just pop in the oven. I received this recipe at a potluck 13 years ago from a coworker who was not allowed by her peers to bring any other dish. A salad and crusty bread and your meal is complete. This is a proven family favorite. Tastes a lot like stuffed cabbage but much easier. If you do not tell them cabbage is included, they will not know what hit them until after they tell you they love it! Texas Pete® hot sauce is a good way to spice it up a bit on your plate.
