2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1/2 tsp. zest and 1 Tbsp. juice from 1 lemon
1/2 tsp. vanilla
2 eggs

Steps:

  • Heat oven to 350°F.
  • Combine cookie crumbs and margarine; press onto bottom of 8-inch square pan sprayed with cooking spray.
  • Beat cream cheese, sugar, lemon zest, juice and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 20 to 25 min. or until center is almost set. Cool completely. Refrigerate 3 hours.

52 vanilla wafers, finely crushed (about 2 cups)
3 Tbsp. butter or margarine, melted
4 eggs, divided
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1-3/4 cups sugar, divided
3 Tbsp. flour
1 Tbsp. zest and 1/3 cup juice from 2 lemons, divided
1/2 tsp. vanilla
2 Tbsp. cornstarch
1/2 cup water
1/2 cup blueberries

Steps:

  • Heat oven to 325ºF.
  • Line 13x9-inch pan with parchment, with ends of parchment extending over sides. Combine wafer crumbs and butter; press onto bottom of prepared pan. Bake 10 min.
  • Meanwhile, separate 1 egg; refrigerate yolk until ready to use. Beat cream cheese, 1 cup sugar, flour, lemon zest, 2 Tbsp. lemon juice and vanilla in large bowl with mixer until blended. Add egg white and remaining 3 whole eggs, 1 at a time, mixing on low speed after each just until blended.
  • Pour cream cheese batter over crust.
  • Bake 40 min. or until center is almost set. Cool 1 hour. Refrigerate 4 hours.
  • Combine cornstarch and remaining sugar in medium saucepan; gradually stir in water and remaining lemon juice until blended. Bring just to boil on medium heat, stirring constantly; cook and stir until clear and thickened.
  • Beat reserved egg yolk in small bowl with fork until blended. Add 2 Tbsp. of the hot cornstarch mixture to beaten egg yolk; mix well. Return to remaining cornstarch mixture in saucepan; stir until blended. Cook 1 min. or until thickened, stirring constantly. Cool slightly.
  • Spoon lemon glaze over cheesecake. Refrigerate 1 hour or until firm. Use parchment handles to remove cheesecake from pan before cutting into bars. Serve topped with blueberries.

1/3 cup finely chopped pecans
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 cups granulated sugar
3 eggs
1 Tbsp. lemon zest
1/2 cup lemon juice
1 Tbsp. powdered sugar

Steps:

  • Heat oven to 350°F.
  • Beat butter, 1/3 cup powdered sugar and vanilla in large bowl with mixer until well blended. Gradually beat in 1-1/2 cups flour. Stir in nuts; press onto bottom of13x9-inch pan sprayed with cooking spray. Bake 15 min.
  • Meanwhile, beat cream cheese and granulated sugar in medium bowl with mixer until well blended. Add eggs, 1 at a time, beating well after each addition. Add remaining flour, lemon zest and juice; mix well.
  • Pour cream cheese mixture over crust. Bake 30 min. or until center is set. Cool completely. Sprinkle with 1 Tbsp. powdered sugar just before cutting into bars to serve.

3 tablespoons white sugar
2 medium lemons, zested and juiced, divided
2 (8 ounce) packages refrigerated crescent roll dough (such as Pillsbury® Recipe Creations®), divided
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line the bottom and sides of a 9x13-inch dish with aluminum foil and spray with cooking spray.
  • Mix 3 tablespoons sugar with 1/4 of the lemon zest; set aside.
  • Unroll one piece of crescent dough and press in the bottom of the prepared dish, stretching dough to the edges.
  • Mix lemon juice and remaining lemon zest in a large bowl. Add cream cheese and 1/2 cup white sugar; beat with an electric mixer until smooth and creamy. Spread over the crescent dough in the pan.

2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
4 Tbsp. lemon juice
Zest of 2 lemons, divided use
1/2 cup plus 3 Tbsp. granulated sugar, divided use
2 Tbsp. butter, melted

Steps:

  • Preheat oven to 350°F.
  • Prepare a 9x13-inch baking dish by lining with parchment paper, leaving an overhang on the long sides. Unroll one crescent dough sheet and press onto bottom of the baking dish to form a bottom crust that reaches all sides.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese, lemon juice, 1-1/2 teaspoons lemon zest, and 1/2 cup sugar until smooth and creamy. Spread evenly over the crescent dough on bottom of baking dish.
  • Unroll second crescent dough sheet and place on top of the cream cheese mixture, stretching to reach the edges of the baking dish. Brush with melted butter. Combine remaining sugar and remaining lemon zest, then sprinkle over top crust.
  • Bake for 25 to 30 minutes or until crust is golden brown. Cool on a wire rack for 20 minutes, then place in the fridge for at least 1 hour to set. When ready to serve, use the parchment paper edges to transfer the dessert from the baking dish to a cutting board. Cut into bars.

1/2 cup melted butter
1 egg, slightly beaten
8 ounces cream cheese, softened
1 (16 ounce) container lemon frosting
1 egg
1 teaspoon lemon juice

Steps:

  • Bottom:
  • Combine cake mix, butter, and egg. Mix with fork until moistened.
  • Set aside 1 cup of mix.
  • Grease bottom only of 9x13 pan.
  • Pat mix into it.
  • Top:
  • Mix 3/4 container frosting (about 1 1/4 cups) with rest of cake mix, egg, cream cheese, and lemon juice.
  • Beat 3 to 5 minutes.
  • Spread over cake mixture.
  • Bake at 350 degrees for 30 to 40 minutes or until lightly browned.
  • When cool, spread top with remaining frosting.
  • Store in refrigerator. Bars cool easier when chilled.
