- Whip softened cream cheese into warm mashed potatoes. Sir in pimientos; season to taste with garlic salt. Put in oven at 350 degrees for 30-45 minutes.

PIMENTO POTATO CASSEROLE
- Boil potatoes in jackets until almost done; chill until very cold; peel and shred with a grater Melt butter in double boiler Add cheese, a small amount at a time Mix together the sour cream and milk Add to cheese mixture.
- Add onions and stir Add Salt and pepper to taste Add shredded potatoes Put in casserole dish Bake at 350 for 45 minutes, uncovered.

RANCH POTATO CASSEROLE
- Cook the potatoes until tender. I usually bake them in the oven the night before wanting to prepare this dish, but you can also boil them. Quarter the potatoes, leaving the skin on.
- In a large bowl, whisk together the sour cream, ranch dressing, bacon, parsley, and the 1 cup of cheese. Toss quartered potatoes in dressing mixture and place into a greased 9x13-inch baking pan. Top with the 1/2 cup of the cheese.
- In a small bowl, combine the corn flakes and butter; sprinkle over the casserole. Bake at 350 degrees for 35-45 minutes.

This recipe has been in my family for so long. It is a favorite and a must have side dish with burgers, BBQ...It is very simple also. I promise you will love this recipe :)
